- 1 nice fat stewing hen (the fatter the better)
- 2 teaspoon baking pwdr
- 1 teaspoon salt
- 2 Large eggs
- 1/2 c. buttermilk
- 2 c. flour

- Cut chicken into pcs, cook over slow heat till tender. Makes a thin paste of flour and lowfat milk, stir in broth, making a gravy. (chicken may be removed, if you like) Sift together dry ingredients. In a large bowl beat together Large eggs and buttermilk, and add in dry ingredients to make a dough, roll out in pastry board, cut into 3 inch strips. Place in a large baking pan. Pour over this the gravy and chicken. Bake this 15 to 20 min at 450 degrees. For variation, some partially cooked vegetables may be added. Also dough strips or possibly biscuits dropped on top.
