Every Filipino has somehow, sometime tasted and cooked this Filipino staple. Great over hot, steamed rice, flaked over pasta or sandwiched in bread with lettuce!

- marinate meat in 1/4 cup soy sauce and pepper for about 10 minutes. This is optional but adds considerable flavor to the meat.
- in a pan, heat oil and saute meat until it is brown
- add say sauce, garlic, onion and bayleaf and water. simmer until meat is tender and sauce is reduced to half.
- Add salt and pepper according to taste.
- Add vinegar and simmer over low heat. Do not stir until the vinegar is fully cooked ( you will taste that the "sourness" of the vinegar has mellowed). Let it simmer in low fire for about 5 minutes.
- The sauce should be very reduced by now.
- You may serve this already over steamed rice or you may store and fry in a little oil the next day......
