- In large saucepan, saute/fry vegetables in butter for 10 min.
- Stir in flour. Add in the broth and heat, stirring constantly, till mix comes to a boil.
- Add in barley. Cover and simmer soup till barley is cooked through,, about 1 hour.
- Stir in the lowfat milk, meat, salt, and pepper. Heat thoroughly and serve. Serves 8.
