..So,finally%20our%20hard%20work%20got%20paid-off%20and%20am%20entering%20the%20second%20phase%20of%20my%20career%20on%20coming%20Monday..Thanks%20to%20all%20of%20you%20who%20wished%20me%20good-luck%20and%20I%20need%20that%20in%20tons%20in%20future%20too..:)%20..Well..so%20that%20really%20makes%20a%20very%20strong%20excuse%20for%20my%20absence..aint%20it%20?..I%20really%20missed%20you%20all,the%20usual%20food%20blog%20browsing%20,drooling%20,commenting%20,reading%20your%20comments%20and%20the%20regular%20stuff..From%20my%20ordeal%20story,probably%20you%20might%20have%20guessed%20the%20cooking%20scenario%20at%20home..We%20mostly%20ate%20out%20or%20lived%20on%20simple%20meals%20and%20I%20never%20touched%20my%20cam..Now%20that%20I%20am%20going%20to%20be%20even%20more%20busy,mostly%20that%E2%80%99ll%20be%20the%20scene%20in%20future%20too..:P..I%20seriously%20wish%20its%20not,will%20have%20to%20dig%20a%20way%20out..:p%20..And%20thinking%20about%20the%20coming%20days%20when%20my%20poor%20husband%20will%20have%20to%20really%20tolerate%20my%20one%20pot%20meals%20or%20take%20outs%20or%20salads,I%20thought%20of%20treating%20him%20with%20a%20special%20chicken%20dish,spicy%20as%20he%20likes%20it..Initially%20I%20thought%20of%20making%20Vindaloo,but%20then%20found%20out%20that%20it%20requires%20a%20lot%20of%20marinating%20time%20n%20stuff,so%20decided%20to%20go%20for%20this%20Chettinad%20dish%20from%20Sanjeev%20Kapoor%20%E2%80%98Indian%20recipe%20Khazana%E2%80%99%20cookbook.Its%20a%20totally%20kick-arse%20kinda%20spicy%20chicken%20dish%20from%20Chettinad,%20a%20place%20in%20Tamil%20Nadu%20in%20South%20India.Their%20cuisine%20is%20famous%20all%20through-out%20the%20world%20for%20its%20authentic%20taste%20and%20spicy%20kick.They%20use%20aromatic%20and%20pungent%20spices%20for%20all%20their%20preparations%20and%20pair%20it%20with%20rice%20or%20rice%20based%20accompaniments%20like%20Dosa,Idli,appam%20etc..%20I%20have%20seen%20two%20versions%20of%20this%20recipe-%20with%20and%20without%20coconut.I%20decided%20to%20go%20with%20the%20with-coconut%20version%20,being%20a%20true-blue%20mallu..;)..Maria%20also%20has%20the%20same%20dish%20featured%20in%20her%20blog%20n%20our%20recipes%20are%20mostly%20same%20with%20some%20modifications%20I%20made%20to%20adjust%20my%20spiciness..Infact,because%20of%20our%20matching%20tastes%20n%20love%20for%20authentic%20spicy%20non-veg%20we%20have%20many%20recipes%20in%20common%20..:)%20So,here%20is%20the%20recipe%20for%20you%20to%20try..But%20careful%20guys,adjust%20the%20spiciness%20and%20use%20fresh/frozen%20grated%20coconut,not%20the%20dried%20ones%20for%20this%20as%20the%20fresh%20one%20gives%20this%20a%20subtle%20sweetness%20which%20pairs%20we%20with%20the%20spiciness%20of%20the%20dish.%20Ingredients%3C/p%3E%3Cp%3ECoconut%20Oil%20%20Method%20Marinate%20chicken%20n%20keep%20aside.%20Take%20a%20pan%20add%20a%20tsp%20of%20coconut%20oil%20and%20throw%20in%204-5%20curry%20leaves.%20Also,pop%20in%20the%20cumin%20seeds,fennel%20seeds,poppy%20seeds,cloves,cinnamon,cardamom,anise,pepper%20corns,redchillies%20and%20coriander%20seeds.Fry%20them%20until%20fragrant%20under%20low%20heat.%20Then,add%20the%20chopped%20small%20onions%20and%20fresh%20grated%20coconut.Fry%20them%20under%20med-low%20heat%20for%20sometime.%20I%20can%20really%20stand%20by%20the%20stove%20forever%20sniffing%20on%20and%20on..Its%20so%20sooo%20divine%20and%20one%20of%20ma%20favorite%20fragrances%E2%80%A6All%20that%20spices%20n%20coconut%20slowly%20frying%20gives%20out%20some%20heavenly%20scent..%20When%20they%20start%20turning%20golden%20brown%20,throw%20in%20the%20ginger%20n%20garlic%20n%20quickly%20toss%20around%20and%20fry%20for%20some%20more%20minutes%20till%20everything%20turn%20dark%20brown.Take%20care%20not%20to%20burn.Keep%20aside%20to%20cool%20a%20little.%20In%20a%20heavy%20bottom%20pan,heat%20coconut%20oil%20and%20some%20curry%20leaves%20followed%20by%20chopped%20onion.Saut%C3%A9%20until%20soft%20.%20Sprinkle%20turmeric%20powder%20and%20keep%20saut%C3%A9ing.%20Meanwhile%20grind%20the%20roasted%20ingredients%20without%20any%20water%20and%20mix%20it%20with%20very%20little%20water%20to%20form%20a%20paste.%20Throw%20this%20into%20the%20pan%20and%20mix%20n%20saut%C3%A9%20with%20onions%20until%20the%20masala%20is%20cooked.%20Now%20pop%20into%20the%20pan%20all%20the%20tomatoes%20and%20if%20you%20like,some%20potatoes..(I%20heart%20eating%20carbs%20and%20that%20too%20paired%20with%20chicken..:P)%20Saut%C3%A9%20for%20few%20more%20minutes.%20Now%20pop%20in%20the%20marinated%20chicken%20n%20mix%20well%20with%20the%20gravy%20n%20cook%20it%20in%20high%20for%205%20minutes%20.%20Add%20a%20cup%20of%20water,close%20n%20cook%20in%20simmer%20till%20well-cooked.Adjust%20salt.%20Toast%20the%20kasoori%20methi%20in%20MW%20or%20stove%20top%20skillet%20until%20its%20crisp%20n%20fragrant.(not%20a%20chettinad%20ingredient,but%20I%20just%20LOVE%20this%20thing..!!)%20When%20the%20chicken%20is%20cooked,open%20the%20lid%20and%20sprinkle%20lime%20juice,some%20fresh%20curry%20leaves%20n%20cilantro.Also,powder%20the%20toasted%20kasuri%20methi%20with%20the%20palm%20of%20your%20hand%20and%20sprinkle%20on%20top%20of%20the%20dish.Close%20immediately%20n%20let%20it%20rest%20for%20an%20hour%20before%20using.%20Verdict%20:%20Finger-licking%20good..Those%20spices%20and%20coconut%20play%20their%20roles%20so%20well%20and%20the%20result%20is%20purely%20awesome..It%20was%20not%20too%20spicy%20for%20me,but%20you%20should%20check%20once%20the%20chicken%20is%20cooked%20and%20if%20its%20too%20much%20for%20you,can%20always%20add%20some%20coconut%20milk%20to%20mellow%20out,%20though%20that%20wont%20be%20a%20Chettinad%20chicken%20anymore.Also,wash%20your%20hands%20well%20after%20dealing%20with%20the%20ground%20spice%20mix%20and%20if%20you%20really%20missed%20it%20,then%20some%20ice%20will%20help%20as%20it%20is%20really%20working%20with%20me%20now..;)%20I%E2%80%99ll%20be%20back%20,hopefully%20soon%20with%20new%20dishes%20and%20you%20all%20guys%20take%20care%20..!:)%20Hugss%3C/p%3E){kind=link}
