Ингредиенты

  • 2 x Boneless skinless chicken breast halves (each half cut into 3 sections) Salt to taste
  • 4 x Scallions thinly sliced
  • 2 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Coarsely minced fresh mint
  • 2 x Garlic cloves finely minced
  • 1 tsp Minced fresh or possibly dry rosemary Black pepper, freshly grnd to taste
  • 1/2 x Lemon, juice only
  • 2 Tbsp. Extra virgin olive oil Extra virgin extra virgin olive oil
  • 1 1/2 Tbsp. Coarsely minced fresh mint
  • 2 x Lemon wedges

  1. For the marinade: Combine the marinade ingredients in a medium bowl and add in the chicken pcs. Marinate for several hrs in the refrigerator.
  2. Preheat the oven broiler or possibly light the coals in a grill.
  3. Spear each chicken section on a skewer. Season with salt to taste.
  4. To broil in the oven: Use the broiler pan with about 1/4-inch of water in the bottom. Be sure the skewers are above the water level. Broil the breasts for about 2 min on each side or possibly till the chicken is no longer pink in the middle.
  5. If using a barbecue grill, simply grill over warm coals for about 2 min on each side or possibly till the chicken is no longer pink in the middle.
  6. Remove the chicken from the skewers and put it in a mixing bowl. Toss with the scallions, oil, and mint. Serve warm or possibly at room temperature, garnished with a little extra virgin extra virgin olive oil, minced mint, and lemon wedges.
