  • 1 lb boneless skinless chicken thighs (may substitute breasts)
  • 2 lrg bell peppers (any color) seeded, quartered
  • 1 lrg red onion peeled, and cut into 1" slices
  • 3 x garlic cloves chopped
  • 1/3 c. fresh lime juice
  • 2 Tbsp. vegetable oil
  • 2 tsp chile pwdr
  • 1 tsp grnd cumin
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp freshly-grnd black pepper
  • 1 doz flour tortillas - (7" dia) warmed Avocado strips for serving Salsa for serving Lowfat sour cream for serving Cilantro leaves for serving

  1. Place chicken and vegetables in a large dish. Combine lime juice, oil and seasonings in a small bowl; mix well and pour over meat and vegetables. Let marinate, refrigerated, several hrs.
  2. Heat barbecue to medium-high heat.
  3. Grill vegetables till light brown; about 3 min per side. Place on platter and cover with foil to keep hot.
  4. Grill chicken about 5 min per side or possibly till cooked through.
  5. Cut meat and vegetables into strips. Place some of each into warmed tortillas and serve with avocado, salsa, lowfat sour cream and cilantro leaves.
  6. This recipe yields 1 dozen fajitas.
  7. Yield: 12 fajitas
