- 1 can (19-oz) chick-peas, rinsed and liquid removed (about 2 c.)
- 2 x Garlic cloves, minced and mashed to a paste with 1/2 tsp. salt
- 1/2 c. Packed fresh parsley leaves, washed well and spun dry
- 1/4 c. Water
- 3 Tbsp. Fresh lemon juice
- 1/4 c. Extra-virgin extra virgin olive oil

- Accompaniment: toasted pita wedges or possibly toasted French bread slices
- In a food processor blend all ingredients except oil till smooth. With motor running add in oil in a slow stream. Season dip with salt. Serve dip with toasts.
