%3C/p%3E%3Cp%3EBut%20first,%20how%20was%20your%20weekend?%20The%20three%20of%20us%20hung%20around%20the%20house,%20lounged%20on%20the%20back%20deck%20by%20the%20pond%20(clearly%20Lincoln%20finds%20it%20as%20relaxing%20as%20we%20do%E2%80%A6)%20visited%20with%20friends%20and%20family,%20and%20Mama%20even%20went%20on%20her%20first%20solo%20outing%20since%20the%20baby%20was%20born%20while%20the%20boys%20hung%20at%20home%20%E2%80%93%20whee!%20I%20can%E2%80%99t%20tell%20you%20how%20much%20a%20simple%20hour%20and%20a%20half%20trip%20to%20the%20grocery%20store,%20Target,%20and%20the%20bank%20does%20for%20the%20soul.%20I%E2%80%99m%20an%20introvert%20and%20could%20stay%20in%20the%20house%20for%20days%20on%20end%20by%20myself,%20however,%20yeah.%20That.%20Felt.%20Great.%20:%20)%3C/p%3E%3Cp%3EBut%20back%20to%20these%20cookies!%20I%20baked%20a%20batch%20this%20weekend%20for%20the%20nurses%20who%20watched%20over%20us%20at%20the%20hospital%20when%20Lincoln%20was%20born.%3C/p%3E%3Cp%3ECan%20I%20just%20tell%20you,%20WE%20MISS%20OUR%20NURSES.%20So%20much!%3C/p%3E%3Cp%3EBoth%20Ben%20and%20I%20are%20beyond%20grateful%20for%20the%20wonderful,%20%E2%80%99round-the-clock%20care%20we%20received%20during%20our%20stay%20at%20the%20hospital.%20We%20actually%20joked%20that%20if%20we%20could,%20we%20would%20return%20every%20year%20for%20family%20vacation.%20I%20mean%20dedicated%20attention,%20room%20service,%20advice,%20comfort,%20reassurance%20%E2%80%93%20bless%20their%20sweet,%20tender,%20and%20caring%20souls.%20Nurses%20rule!%3C/p%3E%3Cp%3ESo%20I%20baked%20the%20Chewy%20Chocolate%20Chip%20Oatmeal%20Cookies%20%E2%80%93%20a%20favorite%20cookie%20recipe%20of%20mine%20that%20I%E2%80%99ve%20been%20using%20since%20I%20was%20a%20kid%20%E2%80%93%20to%20deliver%20this%20week%20and%20properly%20thank%20them%20for%20taking%20such%20good%20care%20of%20us.%3C/p%3E%3Cp%3EThese%20cookies%20are%20slightly%20crispy%20on%20the%20outside,%20and%20fabulously%20chewy%20on%20the%20inside.%20(I%E2%80%99ll%20give%20you%20the%20secret%20to%20the%20combo%20below!)%20Stuffed%20full%20of%20sweet%20chocolate%20chips%20and%20chewy%20oats,%20it%E2%80%99s%20a%20tiny%20gesture%20of%20thanks%20compared%20to%20what%20they%20gave%20us,%20but%20I%20know%20the%20ladies%20will%20enjoy%20the%20mouthwatering%20treats%20nonetheless!%3C/p%3E%3Cp%3EStart%20the%20cookies%20by%20beating%20together%201%20stick%20margarine,%201/2%20cup%20sugar,%20and%201/4%20cup%20brown%20sugar.%20Now,%20I%20usually%20only%20use%20butter%20when%20baking,%20but%20I%20loooove%20margarine%20in%20this%20recipe.%20It%E2%80%99s%20what%20gives%20the%20cookies%20their%20fabulously%20chewy%20texture,%20vs%20a%20more%20crispy%20texture%20that%20butter%20would%20bring%20to%20the%20table.%20It%20doesn%E2%80%99t%20have%20to%20be%20softened%20either,%20which%20is%20great%20for%20making%20a%20batch%20of%20these%20cookies%20on%20the%20fly.%3C/p%3E%3Cp%3ENext%20crack%20in%201%20egg%20and%20add%201%20teaspoon%20vanilla,%20then%20beat%20until%20combined.%20The%20mixture%20may%20look%20slightly%20curdled%20%E2%80%93%20it%E2%80%99s%20fine!%3C/p%3E%3Cp%3EIn%20a%20separate%20bowl,%20stir%20together%203/4%20cup%20flour,%201/2%20teaspoon%20baking%20soda,%20and%201/4%20teaspoon%20salt,%20and%20then%20add%20to%20the%20wet%20ingredients%20in%202%20batches,%20mixing%20until%20just%20combined%20before%20adding%20the%20next%20batch.%3C/p%3E%3Cp%3EFinally,%20add%20in%20the%20mix-in%20must-haves%20%E2%80%93%201-1/2%20cups%20old%20fashioned%20oats,%20and%206oz%20semi-sweet%20chocolate%20chips%20(which,%20FYI,%20is%20just%20half%20the%20chocolate%20chip%20bag!)%3C/p%3E%3Cp%3EScoop%202%20Tablespoons%20worth%20of%20cookie%20dough%20onto%20baking%20sheets%20then%20flatten%20slightly%20and%20bake%20for%208-12%20minutes,%20or%20until%20the%20outsides%20are%20golden%20brown,%20and%20the%20tops%20are%20set.%20Enjoy%20fresh%20from%20the%20oven%20(if%20possible!)%20for%20optimal,%20ooey,%20gooey,%20chewy%20cookie%20perfection!%3C/p%3E%3Cp%3EChocolate%20Chip%20Oatmeal%20Cookies%3C/p%3E%3Cp%3EMakes%2018%20cookies%3C/p%3E%3Cp%3EAdapted%20from%20Quaker%20Oats%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20Beat%20together%20margarine%20and%20sugars%20in%20a%20large%20bowl%20until%20combined.%20Add%20egg%20and%20vanilla%20then%20beat%20until%20combined%20(mixture%20may%20look%20slightly%20curdled.)%3C/p%3E%3Cp%3EIn%20a%20separate%20bowl%20stir%20together%20flour,%20baking%20soda,%20and%20salt%20then%20add%20to%20wet%20ingredients%20in%202%20batches,%20mixing%20until%20just%20combined%20before%20adding%20the%20next%20batch.%20Add%20oats%20and%20chocolate%20chips%20then%20mix%20until%20just%20combined.%3C/p%3E%3Cp%3EDrop%202%20Tablespoons%20worth%20of%20dough%20onto%20cookie%20sheets%20then%20flatten%20slightly%20and%20bake%20for%208-12%20minutes,%20or%20until%20golden%20brown%20around%20the%20edges%20and%20set%20on%20top.%20Rap%20baking%20sheet%20against%20a%20flat%20surface%20to%20deflat
