- Preheat the oven to 375 degrees.
- In a large heavy saucepan, heat the butter, stirring occasionally.
- Remove from the heat.
- Stir in the sugar, salt, flour, oatmeal and lemon peel till a dry crumbly dough forms. Press about two-thirds of the dough (about 1 2/3 c.) into the bottom of a 9-inch square baking pan to make a hard even layer. Top with an even layer of the pie filling. Sprinkle the remaining dough proportionately over the top.
- Bake till lightly browned, about 30 min. Remove to a rack and cold for 20 min. Leave the cake in the pan and cut into 16 squares.

- Notes: These impressive cake squares are effortless to make. A crumb mix is pressed into a baking pan, topped with a can of cherry-pie filling, and finished with more crumbs. During baking, it all combines into a crunchy, gooey confection.
