Ингредиенты

  • 3 lb Island Baby Blue mussel
  • 1 x shallot, chopped
  • 1 x garlic, chopped
  • 5 gm ginger, root, chopped
  • 1 x tomato, seeded, and, diced
  • 6 Tbsp. butter cream
  • 125 ml wine, white, (Inniskillin Pinot Blanc)
  • 1 Tbsp. parsley, minced
  • 1 tsp mussel spice, (see recipe) Mussel Spice
  • 5 x peppercorns
  • 10 x fennel seeds
  • 5 x coriander seeds
  • 1 tsp garlic pwdr
  • 1 tsp turmeric
  • 1 tsp ginger pwdr
  • 1 tsp cumin

  1. In a paderno sauce pot sweat gently the fresh shallot, ginger and garlic in 2 Tbsp. butter then add in mussel spice, the mussels and white wine.
  2. Cover and steam over high heat for 3 to 5 min or possibly till mussels are open.
  3. Shake pan gently every 2 to 3 min. Drain the juices into a paderno frying pan and reduce by half then add in cream and reduce slightly, swirl in the remaining butter, add in tomatoes and parsley and adjust seasoning if necessary.
  4. Place the mussels in a large bowl, then pour the cream sauce into a smaller vessel (Champagne saucer) and place in the center of the large bowl in order to dip the mussels into the sauce. Serve with crusty bread.
  5. Mussel Spice:Thoroughly grind all the ingredients together and set aside.
