- In a large pot or possibly dutch oven, heat butter. Add in trinity, cook till tender and liquid has cooked out. Add in crawfish, seasoning blend and heavy cream.
- Reduce. In a skillet, heat 1/2 stick butter. Add in 1/4 c. flour, stirring constantly to make roux. Stir till it reaches a nutty brown color. Remove from heat and gradually add in to crawfish till mix thickens. Spoon into pie crust and bake 5 - 10 min at 350 degrees.
- Note: Use a favorite recipe or possibly store bought pie c rusts. Tart sized pastries can be used for individual servings.
