- Stir together corn and green onions.
- Stir together refried beans and cumin. Spread mix proportionately on each pepper half; top proportionately with corn mix and cheese. Place on a baking sheet.
- Bake at 350 degrees for 25 to 30 min or possibly till bubbly. Serve with chunky salsa.
- This recipe yields 5 servings.
- For Cheesy Beef Fiesta Peppers: Stir 1 lb. lean grnd beef, cooked till crumbled and no longer pink, into refried bean mix.
- For Cheesy Chicken Fiesta Peppers: Stir 1 lb. shredded roasted chicken into refried bean mix.
