So I decided to tackle dough again! However this time I totally cheated and went for flatbreads, which don’t contain any yeast – it’s only ever the yeast that freaks me out! A little bit of kneading, I can handle… in fact I find it quite therapeutic, though obviously I’m not picturing anyone’s face or anything, oh no.

These cheese and onion stuffed flatbreads were really, really easy to make – even for someone like me who’s generally quite averse to baking. ,%20no%20risk%20of%20them%20deflating%20as%20soon%20as%20you%20take%20them%20out%20of%20the%20oven%20(they%E2%80%99re%20cooked%20in%20a%20pan%20on%20the%20hob!),%20and%20they%E2%80%99re%20pretty%20much%20just%20completely%20foolproof%20(which%20is%20good%20because%20I%20can%20be%20a%20bit%20of%20a%20fool).%3C/p%3E%3Cp%3ESeriously%20%E2%80%93%20you%20know%20when%20you%20see%20people%20on%20TV%20rolling%20out%20dough,%20and%20flipping%20it%20over%20to%20roll%20it%20some%20more,%20and%20it%20all%20goes%20well?%20They%20don%E2%80%99t%20put%20their%20finger%20through%20it,%20it%20doesn%E2%80%99t%20stick%20to%20the%20worktop,%20it%20doesn%E2%80%99t%20shrink%20back%20on%20itself%20with%20every%20roll,%20and%20it%20just%20all%20somehow%20goes%20to%20plan?%20That%E2%80%99s%20what%20these%20are%20like!%20Honestly,%20I%20felt%20like%20a%20superstar%20(I%20was%20actually%20a%20bit%20upset%20that%20nobody%20was%20around%20to%20see%20it).%20The%20dough%20rolled%20out%20reeeeally%20nice%20and%20thin%20with%20barely%20any%20effort.%20Oh,%20and%20did%20I%20mention%20the%20dough%20only%20has%20three%20ingredients%20(plus%20a%20bit%20of%20s%20+%20p)?%20It%E2%80%99s%20awesome.%20When%20it%E2%80%99s%20cooked%20it%20actually%20ends%20up%20almost%20pastry-like%20in%20texture%20%E2%80%93%20quite%20dense%20and%20chewy,%20rather%20than%20a%20light%20and%20fluffy%20bread.%20But%20it%E2%80%99s%20amazing%20all%20the%20same!%3C/p%3E%3Cp%3EDon%E2%80%99t%20worry%20if%20your%20dough%20doesn%E2%80%99t%20roll%20out%20into%20perfect%20circles%20%E2%80%93%20by%20the%20time%20you%E2%80%99re%20tearing%20these%20babies%20apart,%20you%20won%E2%80%99t%20care%20if%20they%E2%80%99re%20perfectly%20neat%20or%20not.%20Just%20tell%20everyone%20you%20were%20going%20for%20%E2%80%98rustic%E2%80%99,%20and%20all%20will%20be%20well.%3C/p%3E%3Cp%3EIf%20you%E2%80%99re%20not%20feeling%20the%20cheese%20and%20onion%20vibe%20I%E2%80%99ve%20gone%20for%20here,%20you%20could%20stuff%20them%20with%20something%20different.%20You%20could%20even%20make%20these%20stuffed%20flatbreads%20into%20a%20full%20meal%20by%20choosing%20a%20more%20substantial%20filling%20%E2%80%93%20curried%20chickpeas,%20samosa-style%20potatoes,%20%20roasted%20veg%E2%80%A6%20as%20long%20as%20you%20don%E2%80%99t%20go%20overboard%20so%20you%E2%80%99re%20still%20able%20to%20press%20everything%20fairly%20flat,%20it%20should%20work%20just%20fine.%3C/p%3E%3Cp%3EHowever%20way%20you%20do%20it,%20serve%20up%20these%20stuffed%20flatbreads%20to%20your%20family%20and%20they%E2%80%99ll%20be%20gone%20in%20the%20blink%20of%20an%20eye!%3C/p%3E%3Cp%3ECheese%20and%20onion%20stuffed%20flatbreads%20%20%20%20%20Prep%20time%20%201%20hour%2040%20mins%20%20%20Total%20time%20%201%20hour%2055%20mins%20%20%20%20%20%20Ingredients%3C/p%3E%3Cp%3E300g%20plain%20flour%20(~2%20cups),%20plus%20more%20for%20dusting%201tbsp%20olive%20oil%20Salt%20Black%20pepper%20~150ml%20water%20(~2/3%20cup)%20150g%20cheddar%20cheese,%20grated%205%20spring%20onions,%20sliced%202tbsp%20oil%202tbsp%20butter%20%20%20Instructions%3C/p%3E%3Cp%3EAdd%20the%20flour,%20olive%20oil%20and%20salt%20and%20pepper%20to%20a%20large%20mixing%20bowl.%20Gradually%20adding%20the%20water,%20knead%20the%20mixture%20with%20clean%20hands%20until%20it%20comes%20together%20into%20a%20dough.%20The%20dough%20should%20be%20moist%20but%20not%20overly%20sticky,%20so%20you%20may%20not%20need%20all%20of%20the%20water%20(or%20you%20may%20need%20a%20dash%20more!).%20Continue%20to%20knead%20for%20a%20few%20more%20minutes,%20until%20the%20dough%20is%20fairly%20elastic.%20Place%20the%20ball%20of%20dough%20into%20a%20lightly%20oiled%20bowl,%20and%20cover%20with%20a%20tea%20towel.%20Leave%20to%20rest%20for%201%20hour.%20After%20an%20hour,%20divide%20the%20dough%20into%20six%20equal%20pieces.%20On%20a%20lightly%20floured%20surface,%20roll%20one%20of%20the%20balls%20into%20a%20rough%20oval%20or%20circle%20shape%20(don't%20worry%20if%20it's%20a%20bit%20irregular!).%20On%20one%20half%20of%20the%20circle,%20add%20a%20bit%20of%20the%20cheese%20and%20a%20few%20of%20the%20sliced%20spring%20onions%20(one%20sixth%20of%20each),%20leaving%20a%20small%20gap%20around%20the%20edge.%20Fold%20over%20the%20other%20half%20of%20the%20circle,%20and%20press%20down%20to%20remove%20as%20much%20of%20the%20air%20as%20possible.%20Seal%20around%20the%20edge%20with%20a%20fork%20(I%20also%20flipped%20mine%20over%20and%20used%20the%20fork%20on%20the%20other%20side%20as%20well%20to%20make%20sure%20it%20was%20well%20sealed).%20Again,%20press%20the%20flatbread%20down%20so%20that%20it's%20really%20flat%20with%20no%20air%20inside.%20Repeat%20with%20the%20remaining%20dough%20and%20fillings.%20Add%20a%20little%20of%20the%20fat%20(I%20used%20a%20mixture%20of%20oil%20and%20butter)%20to%20a%20large%20frying%20pan,%20and%20allow%20it%20to%20heat%20up.%20When%20it's%20just%20sizzling,%20add%20your%20flatbreads%20(I%20did%20two%20at%20a%20time).%20Cook%20over%20a%20medium%20heat%20for%20a%20few%20minutes%20each%20side%20until%20golde
