- Heat the lowfat milk to a boil and add in the lavender. Allow to infuse off the stove for 30 min. Strain out the lavender.
- Heat the butter till it foams and then whisk in the flour. Cook over a medium flame stirring constantly till the roux is golden brown grown and gives a smell of toasted nuts. Cold and reserve.
- Bring the infused lowfat milk back to a boil and whisk in the cooled roux.
- Continue to whisk till the lowfat milk boils and thickens. Stir in the grated cheese. When the cheese is melted and smooth, add in the savory and the Tabasco (yes, a whole Tbsp.). Taste and adjust the seasoning with salt, pepper and lemon.
- Serve warm with bread, apples and pears.
