Cheddar Fondue With Lavender And Savory

Ингредиенты

  • 2 c. Lowfat milk (I used nonfat)
  • 1/4 c. Dry lavender
  • 2 Tbsp. Flour
  • 2 Tbsp. Butter
  • 2 c. Sharp cheddar
  • 2 Tbsp. Minced fresh savory (I used about 1-1/2 teaspoon dry)
  • 1 Tbsp. Tabasco sauce Salt, pepper, lemon to taste

Инструкции

  1. Heat the lowfat milk to a boil and add in the lavender. Allow to infuse off the stove for 30 min. Strain out the lavender.
  2. Heat the butter till it foams and then whisk in the flour. Cook over a medium flame stirring constantly till the roux is golden brown grown and gives a smell of toasted nuts. Cold and reserve.
  3. Bring the infused lowfat milk back to a boil and whisk in the cooled roux.
  4. Continue to whisk till the lowfat milk boils and thickens. Stir in the grated cheese. When the cheese is melted and smooth, add in the savory and the Tabasco (yes, a whole Tbsp.). Taste and adjust the seasoning with salt, pepper and lemon.
  5. Serve warm with bread, apples and pears.
