  • 2 Tbsp. Margarine or possibly butter
  • 1 sm Onion, minced (about 1/4 c.)
  • 1 med Stalk celery, thinly sliced (about 1/2 c.)
  • 2 Tbsp. All-purpose flour
  • 1/4 tsp Pepper
  • 1/4 tsp Dry mustard
  • 1 c. Lowfat milk
  • 1 can (10-3/4 ounces) condensed chicken broth
  • 2 c. Shredded cheddar cheese (8 ounces)

  1. Heat margarine in 2-qt saucepan over medium heat. Cook onion and celery in margarine about 2 min. Stir in flour, pepper and mustard. Stir in lowfat milk and chicken broth. Heat to boiling over medium heat, stirring constantly. Boil and stir 1 minute. Stir in cheese. Heat over low heat, stirring occasionally, just till cheese is melted. Sprinkle with paprika if you like. 6 SERVINGS (ABOUT 1 C. EACH); 355 CALORIES PER SERVING.
