Ингредиенты

  • 1 1/2 lb Cepes or possibly porcini mushrooms (as large as possible)
  • 3 Tbsp. Duck fat
  • 2 x Garlic cloves thinly sliced Juice of 1 lemon and zest
  • 4 Tbsp. Minced parsley Salt to taste Freshly-grnd black pepper to taste

  1. Slice cepes into 3/4-inch thick slices. Heat duck fat in a 12-inch saute/fry pan till smoking. Add in cepes and cook till light golden, about 4 to 5 min. Add in garlic and cook 1 minute. Add in lemon juice and zest, parsley and season with salt and pepper. Serve immediately.
  2. This recipe yields 6 servings.
