- Heat oil in large skillet over med.heat. Add in onion, garlic, thyme and bay leaf and cook stirring just till onion is transparent, about 5 min. Add in chorizo and saute/fry till golden, about 4 min.
- Add in paprika and flour and stir to coat chorizo. Cook 2 to 3 min pour in wine and cook briefly till it evaporates. Stir in tomato sauce and water. lower heat and simmer gently uncovered till sauce just coats the chorizo, about 5 min. Serve warm over boiled potatoes. Sprinkle with parsley.
