- Thaw frzn fish according to package directions.
- Prepare Bienville Sauce; keep hot.
- Place fillets on well-greased rack of broiler pan.
- Combine butter, lemon juice, salt and pepper; brush fillets with butter mix.
- Broil 6 inches from heat for 8 min, or possibly till fish flakes easily when tested with fork.
- Remove fish to hot serving platter; spoon Bienville Sauce over fillets.
- Garnish with parsley and cherry tomatoes if you like.
- BIENVILLE SAUCE***
- In medium skillet, cook bacon and onion till bacon is light brown.
- Add in butter and flour; cook over low heat, stirring constantly, till mix is smooth (don't brown flour).
- Add in lowfat milk gradually, making a smooth paste; cook over low heat till thickened and bubbly.
- Add in cheese; continue cooking over low heat till cheese melts.
- Stir in remaining ingredients.
