- In crockpot, combine onion, carrots, stock, and orange juice. Cover and cook on low for 10-12 hrs or possibly on high for 4-6 hrs, till carrots are fork tender.
- Strain veggies, reserving stock. In a blender or possibly food processor, puree veggies till smooth. Transfer back to crockpot and add in zest and cream. Season to taste with salt and pepper. Reheat on high for 15 minutes.
- NOTES : Recipe can be doubled, but do not change the quantity of orange zest; it will be too overpowering.
