,%20freezer%20and%20dishwasher%20safe%20this%20is%20a%20food%20grade,%20no%20stick%20silicone%20baking%20pan.%20%20%20I%20have%20to%20admit%20this%20was%20the%20first%20time%20I%20have%20ever%20used%20a%20silicone%20baking%20pan.%20%20We%20were%20having%20the%20Sister%20Missionaries%20over%20for%20tea%20and%20I%20thought%20I%20would%20bake%20them%20a%20cake%20in%20this%20pan%20to%20show%20them%20how%20much%20we%20love%20them.%3C/p%3E%3Cp%3EI%20decided%20on%20a%20Carrot%20Cake,%20because%20well%20.%20.%20.%20who%20doesn't%20love%20a%20delicious%20carrot%20cake???%20%20I%20don't%20know%20anyone%20who%20doesn't%20love%20a%20delicious%20carrot%20cake!%3C/p%3E%3Cp%3EHaving%20never%20baked%20with%20a%20silicone%20pan%20before%20I%20was%20a%20bit%20nervous.%20%20You%20are%20not%20supposed%20to%20butter%20or%20line%20them%20and%20I%20was%20a%20bit%20wary%20of%20this%20.%20.%20.%20would%20it%20stick????%20%20I%20closed%20my%20eyes%20and%20went%20with%20the%20flow.%3C/p%3E%3Cp%3ENote,%20it%20is%20advisable%20to%20place%20any%20silicone%20bakeware%20onto%20a%20baking%20sheet%20for%20baking%20as%20it%20is%20very%20flexible%20and%20you%20may%20end%20up%20with%20cake%20batter%20on%20the%20floor!%20%20Thankfully,%20I%20was%20thinking%20ahead%20and%20did%20just%20that!%20%20Nobody%20can%20accuse%20me%20of%20not%20being%20a%20smart%20cookie!%3C/p%3E%3Cp%3EThe%20cake%20turned%20out%20beautifully.%20%20%20The%20slices%20cut%20into%20perfect%20shaped%20hearts,%20which%20were%20so%20appealing%20and%20the%20girls%20were%20really%20impressed!%3C/p%3E%3Cp%3EBut%20it%20wasn't%20just%20the%20shape%20of%20the%20cake%20slices%20with%20impressed%20them,%20I%20will%20admit.%20%20%20%20They%20were%20also%20very%20fond%20of%20the%20cake%20itself%20.%20.%20.%20dense%20and%20moist%20.%20.%20.%20just%20what%20a%20good%20carrot%20cake%20should%20be%20.%20.%20.%3C/p%3E%3Cp%3EWith%20little%20nuggets%20of%20sweet%20sticky%20sultana%20raisins%20scattered%20throughout,%20not%20to%20mention%20crunch%20little%20bits%20of%20toasted%20walnuts.%20%20%20I%20always%20toast%20my%20nuts%20before%20baking%20with%20them.%20%20A%20bit%20of%20toasting%20helps%20to%20enhance%20that%20beautiful%20nutty%20flavour%20.%20.%20.%20just%20what%20you%20want,%20and%20it%20helps%20to%20add%20to%20the%20crunch%20as%20well.%20%20At%20least%20that's%20my%20way%20of%20thinking%20.%20.%20.%3C/p%3E%3Cp%3EDark%20and%20delicious%20with%20flecks%20of%20carrot%20throughout,%20and%20just%20enough%20spice%20.%20.%20.%20cinnamon,%20nutmeg%20.%20.%20.%20vanilla%20.%20.%20.%20but%20the%20flavour%20doesn't%20stop%20there%20.%20.%20.%3C/p%3E%3Cp%3EThere%20is%20also%20a%20delicious%20hint%20of%20spice%20.%20.%20.%20ginger%20to%20be%20exact%20.%20.%20.%20in%20that%20lucious%20buttercream%20frosting.%20%20I%20know%20.%20.%20.%20it's%20usual%20to%20have%20a%20cream%20cheese%20frosting%20on%20a%20carrot%20cake,%20and%20I%20do%20love%20that%20as%20well,%20but%20I%20have%20never%20had%20much%20success%20with%20cream%20cheese%20frosting%20over%20here%20in%20the%20UK.%3C/p%3E%3Cp%3EThe%20cream%20cheese%20is%20more%20liquid%20than%20what%20I%20am%20used%20to%20and%20it%20takes%20toooooo%20much%20icing%20sugar%20to%20make%20it%20firm.%20%20I%20just%20go%20with%20butter%20cream%20normally,%20and%20today%20a%20ginger%20butter%20cream,%20the%20ginger%20flavouring%20coming%20from%20the%20syrup%20in%20my%20jar%20of%20preserved%20gingerroot,%20but%20do%20use%20powdered%20ginger%20if%20that's%20all%20you%20have.%20%20All%20in%20all,%20with%20the%20shape%20and%20the%20cake%20and%20the%20icing%20.%20.%20.%20everybody%20was%20very%20happy,%20very%20happy%20indeed!%3C/p%3E%3Cp%3E*Carrot%20Cake%20with%20a%20Ginger%20Buttercream%20Frosting*%3C/p%3E%3Cp%3EMakes%20one%209%20by%2015%20inch%20cake%3C/p%3E%3Cp%3Eor%20a%209%20inch%20two%20layer%20cake%3C/p%3E%3Cp%3ERich%3C/p%3E%3Cp%3Eand%20delicious%20and%20filled%20with%20raisins%20and%20toasted%20walnuts.%20%20It's%20a%20bit%3C/p%3E%3Cp%3Eold%20fashioned,%20but%20what%20works%20works.%20%20You%20can't%20argue%20with%20success.%20%20%20I%3C/p%3E%3Cp%3Echoose%20to%20make%20a%20Ginger%20Buttercream%20to%20slather%20on%20top%20of%20mine%20because%20I%3C/p%3E%3Cp%3Efind%20the%20cream%20cheese%20over%20here%20makes%20a%20frosting%20that%20is%20far%20too%20runny,%3C/p%3E%3Cp%3Ebut%20by%20all%20means%20if%20you%20have%20a%20cream%20cheese%20frosting%20that%20you%20like,%20use%3C/p%3E%3Cp%3Eit%20instead.%20%20Just%20flavour%20it%20with%20a%20bit%20of%20ginger.%3C/p%3E%3Cp%3EFor%20the%20cake:%3C/p%3E%3Cp%3Eprepared%20pan%20(s).%3C/p%3E%3Cp%3EBake%20for%2010%20minutes%20and%20then%20lower%20the%20oven%3C/p%3E%3Cp%3Etemperature%20to%20180*C/350*F/%20gas%20mark%204%20and%20bake%20for%2030%20to%2035%20minutes%3C/p%3E%3Cp%3Elonger,%20or%20until%20the%20top%20springs%20back%20when%20lightly%20touched%20and%20a%3C/p%3E%3Cp%3Etoothpick%20inserted%20in%20the%20centre%20comes%20out%20clean.%20%20Allow%20to%20cool%20in%20the%3C/p%3E%3Cp%3Epan%20(s)%20for%20ten%20minutes%20before%20turn
