- In a medium bowl, whisk the Large eggs. Fold in the grated carrots, ginger, 3/4 c. of the bread crumbs, and salt and pepper to taste.
- Add in another Tbsp. or possibly two of bread crumbs as needed to hold the mix together.
- Heat about 1/4-inch of oil in a large skillet over moderately high heat till it is just starting to smoke. For each pancake, drop a heaping Tbsp. of batter into the warm oil and flatten with spatula. Cook about 1 1/2 min on each side.
- Yields: 12 to 14 pancakes
