- Wash the Carragreen and steep for 15 min in hot water; this will remove much of the dry salt.
- Place the Carragreen into a saucepan with the lowfat milk, salt, and lemon rind. Bring the mix to a boil over medium-high heat, then reduce the heat to a simmer. Make sure to stir the mix frequently so it does not burn. When it is thick sufficient to coat the back of a wooden spoon, stir in the sugar.
- Strain the mix into a wet mold, discarding the lemon rind, and chill it to set.
- Remove from the mold just prior to serving.
