Last weekend, my husband was craving Pulled Pork Sandwiches. The timing for his request was perfect, because I had just received the June/July issue of Cook's Country Magazine. (This magazine/TV show is part of the Cook's Illustrated family.)
I bookmarked several of their recipes, as this is one of the best issues I've received in a long time! I really enjoy reading each article that explains how the recipes was tested, what failed and what ultimately worked. I've never tasted Carolina Slaw before, and I was intrigued. %3C/p%3E%3Cp%3EI%20bookmarked%20several%20of%20their%20recipes,%20as%20this%20is%20one%20of%20the%20best%20issues%20I've%20received%20in%20a%20long%20time!%20%20I%20really%20enjoy%20reading%20each%20article%20that%20explains%20how%20the%20recipes%20was%20tested,%20what%20failed%20and%20what%20ultimately%20worked.%20I've%20never%20tasted%20Carolina%20Slaw%20before,%20and%20I%20was%20intrigued.%20The%20ingredients%20includes%20cider%20vinegar,%20a%20bit%20of%20red%20pepper%20flakes%20and%20ketchup--%20I%20had%20all%20of%20the%20ingredients%20on%20hand.%20%20%20I%20had%20just%20purchased%20a%20bag%20of%20finely%20shredded%20cabbage%20(one%20of%20my%20weekend%20shortcuts)%20because%20cole%20slaw%20is%20a%20perfect%20pairing%20with%20pulled%20pork.%20%20My%20husband%20looked%20a%20bit%20disappointed%20that%20I%20was%20trying%20a%20new%20slaw%20recipe,%20because%20he's%20such%20a%20fan%20of%20my%20Creamy%20Cole%20Slaw.%3C/p%3E%3Cp%3EI%20decided%20to%20let%20my%20food%20processor%20chop%20the%20cabbage%20into%20small%20bits--which%20is%20what%20the%20Cook's%20Country%20photograph%20looked%20like.%20%20In%20hindsight,%20I%20wish%20I%20had%20a%20large%20head%20of%20cabbage.%20I%20would%20have%20cut%20it%20into%20wedges;%20using%20the%20shredding%20blade,%20a%20food%20processor%20is%20a%20lot%20easier%20than%20hand%20slicing.%20Your%20choice.%20%20(The%20pre-shredded%20cabbage%20was%20almost%20too%20fine.)%3C/p%3E%3Cp%3EThe%20dressing%20is%20very%20simple%20to%20make:%20Cider%20vinegar%20and%20red%20pepper%20flakes%20are%20microwaved,%20until%20the%20mixture%20is%20bubbling%20around%20edges,%201%20to%201%201/2%20minutes.%20Next,%20ketchup%20and%201%20teaspoon%20salt%20is%20added%20into%20vinegar%20mixture%20until%20combined.%20Done!%3C/p%3E%3Cp%3EI%20liked%20Cook's%20Country%20quick%20technique%20to%20draw%20moisture%20from%20the%20cabbage.%20Because%20cabbage%20releases%20a%20lot%20of%20water,%20they%20didn't%20want%20soggy%20or%20runny%20salad.%20%20Instead%20of%20salting%20the%20cabbage%20to%20draw%20out%20the%20moisture--%20which%20can%20take%20an%20hour--%20a%20quick%20method%20is%20to%20toss%20cabbage,%20sugar,%20and%201%20teaspoon%20salt%20in%20large%20bowl.%20The%20bowl%20is%20covered%20and%20microwaved%20until%20the%20cabbage%20is%20just%20beginning%20to%20wilt,%201%201/2%20to%202%20minutes,%20stirring%20halfway%20through.%20Transfer%20cabbage%20mixture%20to%20colander%20set%20over%20bowl.%20Let%20cool%20to%20room%20temperature,%20about%2015%20minutes,%20stirring%20occasionally.%3C/p%3E%3Cp%3EPress%20the%20cabbage%20to%20release%20excess%20moisture;%20discard%20liquid%20(it%20should%20measure%20about%201/3%20cup).%20Toss%20the%20cabbage%20and%20dressing%20in%20clean%20large%20bowl%20until%20combined.%20Cover%20and%20refrigerate%20for%2030%20minutes%20or%20up%20to%202%20days.%20Serve.%3C/p%3E%3Cp%3EMy%20husband%20and%20I%20are%20headed%20to%20the%20California%20Foothills%20of%20the%20Sierras,%20this%20Monday,%20to%20enjoy%20our%20timeshare.%20We're%20off%20for%20some%20much%20needed%20R&R%20and%20to%20catch%20up%20on%20our%20reading.%20Hopefully,%20I%20can%20access%20the%20internet%20so%20that%20I%20can%20catch%20up%20on%20my%20food%20blogroll.%20%20I'm%20sure%20going%20to%20try!%3C/p%3E){kind=link}
