- For the Cake:
- 3 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups firmly packed light brown sugar
- 1 1/4 cups granulated sugar
- 1 1/2 cups (3 sticks) butter, softened
- 6 large eggs
- 1 1/4 cups milk
- For the Frosting:
- 1/2 cup (1 stick) butter
- 1 cup firmly packed dark brown sugar
- 1/2 cup milk (plus more if needed to thin frosting)
- 1/2 teaspoon vanilla extract
- 4 cups powdered sugar

%20it%20was%20a%20wonderful%20book%20and%20I%20was%20very%20sad%20when%20it%20ended.%20%20Sad%20because%20I%20wanted%20to%20stay%20a%20bit%20longer%20with%20the%20characters%20I%20had%20come%20to%20love.%20%20It's%20the%20story%20of%20black%20maids%20working%20for%20white%20women%20in%20the%20American%20South%20in%20the%2060's...touching,%20sweet,%20bitter,%20funny%20-%20I%20loved%20it.%20%20Of%20course,%20I%20also%20loved%20the%20mention%20of%20Caramel%20Cake%20that%20popped%20up%20several%20times%20in%20the%20book.%20%20It's%20a%20Southern%20thing%20-%20and%20no%20Southern%20ladies%20auxiliary%20luncheon%20(or%20funeral!)%20would%20be%20complete%20without%20one.%3C/p%3E%3Cp%3EA%20few%20years%20ago%20I%20picked%20up%20a%20copy%20of%20My%20Mother's%20Southern%20Entertaining%20by%20James%20Villas%20with%20Martha%20Pearl%20Villas%20(and%20you%20can%20order%20it%20from%20Amazon,%20too).%20%20James%20Villas%20is%20the%20author%20of%20nine%20books%20on%20food%20and%20the%20good%20life%20and%20he%20worked%20as%20the%20food%20and%20wine%20editor%20of%20Town%20and%20Country%20Magazine%20for%20twenty-seven%20years...so%20the%20man%20knows%20of%20what%20he%20speaks!%20%20His%20mother,%20Martha%20Pearl,%20was%20famous%20for%20her%20cooking%20and%20even%20appeared%20on%20national%20TV%20in%20cooking%20segments%20and%20on%20Food%20Network.%20%20So,%20when%20you%20combine%20the%20sons%20knowledge%20of%20good%20food%20with%20his%20mother's%20years%20of%20experience,%20you%20get%20a%20fantastic%20cookbook...and%20this%20is%20where%20I%20found%20one%20of%20my%20all-time%20favorite%20go-to%20recipes...Caramel%20Pound%20Cake.%3C/p%3E%3Cp%3EThis%20cake%20is%20quite%20deceptive...your%20first%20bite%20will%20have%20you%20thinking,%20%22it's%20okay,%20yeah,%20it's%20good%22%20but%20by%20the%20time%20you%20take%20your%20second%20bite,%20the%20caramel%20frosting%20will%20have%20melted%20just%20enough%20on%20your%20tongue%20so%20that%20your%20taste%20buds%20are%20standing%20up%20and%20saluting!%20%20It's%20dense,%20pound%20cake%20crumb%20has%20a%20buttery-caramel%20taste%20from%20the%20THREE%20sticks%20of%20butter%20-%20yep,%20THREE!%20%20There%20are%20also%20six%20eggs%20in%20this%20cake...it's%20as%20rich%20as%20it%20is%20delicious.%20%20And%20it's%20easy%20to%20make...plus,%20if%20wrapped%20tightly%20in%20plastic%20wrap,%20it%20will%20keep%20in%20the%20refrigerator%20for%20TWO%20weeks!%20%20Think%20about%20that...two%20weeks%20of%20savoring%20a%20slice-o-Heaven%20every%20afternoon%20at%203:00...something%20to%20live%20for!%3C/p%3E%3Cp%3EDon't%20think%20of%20the%20caramel%20on%20a%20caramel%20apple...think%20of%20soft%20homemade%20caramels%20with%20a%20hint%20of%20vanilla%20because%20that's%20what%20this%20frosting%20is%20like...you%20don't%20have%20to%20have%20discount%20knowledge%20from%20a%20junior%20college%20to%20know%20this%20is%20dang,%20dang,%20dang,%20dang,%20dang%20good...5%20dangs%20on%20the%20meter%20folks...it's%20definitely%20coma%20worthy%20-%20every%20buttery%20bite.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325%20degrees.%20%20Grease%20a%2010-inch%20Bundt%20pan%20and%20set%20aside.%3C/p%3E%3Cp%3ETo%20make%20the%20cake:%20%20Sift%20the%20flour,%20baking%20powder,%20and%20salt%20together%20into%20a%20medium-size%20mixing%20bowl%20and%20set%20aside.%20%20In%20the%20bowl%20of%20an%20electric%20mixer,%20cream%20together%20both%20of%20the%20sugars%20and%20the%20butter,%20about%205%20minutes.%20%20Add%20in%20the%20eggs,%20one%20at%20a%20time,%20beating%20well%20after%20each%20addition.%20%20Alternately,%20add%20the%20flour%20mixture%20and%20the%20milk%20to%20the%20cream%20mixture,%20beginning%20and%20ending%20with%20the%20flour%20mixture.%20%20Mix%20until%20well%20blended%20and%20smooth%20but%20do%20not%20over-beat.%20%20Scrape%20the%20batter%20into%20the%20prepared%20pan%20and%20bake%20until%20the%20knife%20(not%20a%20toothpick)%20inserted%20into%20the%20center%20of%20the%20cake%20comes%20out%20almost%20clean,%20about%201%20hour.%20%20(I%20usually%20have%20to%20bake%20this%20cake%20about%20an%20hour%20and%2015%20to%2020%20minutes%20-%20but%20that's%20just%20my%20oven%20-%20start%20checking%20cake%20after%20an%20hour%20to%20see%20if%20the%20center%20is%20set%20by%20lightly%20touching%20to%20see%20if%20it%20bounces%20back%20a%20bit%20and%20feels%20firm.%20%20Be%20careful%20not%20to%20over-bake.)%20%20Transfer%20the%20cake%20to%20a%20wire%20rack%20and%20let%20cool%20in%20the%20pan%20for%2010%20minutes%20then%20turn%20out%20onto%20the%20rack%20to%20cool%20completely.%3C/p%3E%3Cp%3ETo%20make%20the%20frosting:%20%20Melt%20the%20butter%20in%20a%20large,%20heavy%20saucepan%20over%20medium%20heat,%20then%20add%20the%20brown%20sugar%20and%20milk%20and%20stirring,%20bring%20the%20mixture%20almost%20to%20a%20boil.%20%20Remove%20from%20the%20heat%20and%20let%20cool%20for%2020%20minutes,%20then%20stir%20in%20the%20vanilla.%20%20Pour%20the%20caramel%20mixture%20into%20the%20bowl%20of%20an%20electric%20mixer%20and%20gradually%20add%20the%20powdered%20sugar,%20beating%20well,%20until%20blended%20and%20very%20smooth.%20%20If%20frosting%20seems%20too%20thick,%20add%20one%20tablespoon%20of%20milk%20at%20a%20time%20to%20thin.%3C/p%3E%3Cp%3ETransfer%20the%20cake%20to%20a%20cake%20plate%20and%20frost%20the%20top%20and%20sides.%20%20Let%20the%20cake%20stand%20for%20at%20least%201%20hour%20before%20serving.%20%20Serves%20at%20least%2010.%3C/p%3E%3Cp%3E(The%20mister%20cut%20himself%20a%20big%20ol'%20slice%20and%20started%20whistling%20as%20he%20made%20his%20way%20upstairs%20to%20eat%20his%20cake%20on%20the%20bed%20while%20watching%20TV...but%20what%20was%20it%20he%20was%20whistling?%20%20%20%22I'm%20Back%20In%20The%20Saddle%20Again!%22%20%20Eating%20dessert%20on%20the%20bed%20in%20front%20of%20the%20TV%20-%20yep,%20he's%20back%20in%20the%20saddle%20alright%20and%20there%20is%20peace%20in%20the%20valley.)%3C/p%3E){kind=link}
