%20were%20handed%20out%20to%20event%20goers%20during%20the%20four-day%20festival%20in%20Denver.%20I%20found%20a%20bag%20the%20other%20day%20and%20had%20to%20try%20them%20at%20home.%20Adding%20ingredients%20that%20are%20often%20associated%20with%20a%20summer%20salad%20might%20sound%20strange,%20but%20this%20Caprese%20Stuffed%20Baked%20Potato%20was%20simply%20fabulous.%20I%20called%20my%20daughter%20Emily%20so%20she%20could%20stop%20by%20on%20the%20way%20home%20from%20work%20and%20take%20some%20home%20with%20her.%20She%20used%20them%20for%20a%20dinner%20she%20had%20scheduled%20with%20her%20friend%20Cindy%20and%20they%20were%20good%20enough%20I%20got%20a%20phone%20call%20later%20that%20evening%20with%20both%20girls%20offering%20an%20enthusiastic%20thumbs%20up!%3C/p%3E%3Cp%3EThe%20Rooster%20potato%20is%20slightly%20smaller%20than%20a%20Russet%20potato%20and%20is%20wrapped%20in%20a%20pink,%20thick%20skin%20and%20is%20drier%20than%20other%20strains.%20You%20can%20bake%20it,%20boil%20it,%20mash%20it,%20roast%20it%20or%20fry%20it.%20Though%20starting%20pink,%20after%20baking%20the%20skin%20turns%20a%20golden%20brown%20but%20the%20important%20part%20is%20the%20end%20result.%20A%20yellowish%20and%20fluffy%20flesh%20made%20this%20the%20perfect%20potato%20to%20fill%20with%20these%20ingredients.%20Supple%20and%20easy%20to%20open,%20it%20yielded%20to%20pressure%20without%20falling%20apart,%20a%20great%20quality%20that%20is%20seldom%20heralded%20when%20talking%20potato!%20They%E2%80%99ve%20been%20in%20Colorado%20at%20select%20Walmart%20stores%20since%20last%20October.%20Have%20you%20seen%20them%20where%20you%20live?%20They%E2%80%99re%20definitely%20worth%20trying%20and%20there%20is%20nothing%20sponsored%20about%20that;%20just%20my%20two%20cents%20on%20something%20I%20loved%20and%20was%20excited%20to%20find%20at%20the%20grocery%20store;%20didn%E2%80%99t%20you%20hear%20my%20Whoo%20Hoo??%3C/p%3E%3Cp%3EThis%20was%20one%20of%20those%20dishes%20that%20was%20almost%20too%20good%20to%20believe%20considering%20the%20simplicity%20of%20preparation.%20It%20brought%20a%20reminder%20of%20a%20summer%20favorite%20to%20colder%20months%20with%20the%20use%20of%20roasted%20or%20sun-dried%20tomatoes.%20I%20found%20these%20at%20the%20local%20market%20in%20the%20Olive%20Bar;%20talk%20about%20easy%20and%20delish.%20Luckily%20fresh%20basil%20is%20available%20year%20round%20now%20and%20I%20used%20the%20mozzarella%20that%20comes%20packaged%20as%20a%2016%20oz%20log;%20certainly%20substitute%20shredded%20if%20you%20must;%20but%20the%20fresher%20version%20is%20so%20good%E2%80%A6it%E2%80%99s%20what%20I%20would%20recommend.%3C/p%3E%3Cp%3EEasy,%20breezy%20Caprese!%3C/p%3E%3Cp%3ECaprese%20Stuffed%20Baked%20Potatoes%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EPreparation%3C/p%3E%3Cp%3EHeat%20oven%20to%20400%20degrees.%3C/p%3E%3Cp%3EPour%20enough%20sea%20salt%20onto%20cooking%20tray%20to%20be%20able%20to%20hold%20the%20potatoes,%20place%20the%20potatoes%20on%20the%20salt%20and%20bake%20until%20done;%20approximately%2020-25%20minutes.%3C/p%3E%3Cp%3EMix%20together%20the%20Basil,%20Tomatoes%20and%20chopped%20Mozzarella.%20Drizzle%20with%20half%20the%20olive%20oil,%20mix%20thoroughly%20and%20season%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3EWhen%20the%20potatoes%20are%20done,%20remove%20them%20from%20the%20oven%20and%20cut%20an%20X%20into%20the%20top%20of%20each%20one;%20squeeze%20the%20potato%20to%20open%20it%20up.%3C/p%3E%3Cp%3EPlace%20a%20heaping%20tablespoon%20of%20the%20mozzarella,%20basil%20and%20tomato%20mixture%20into%20each%20potato,%20drizzel%20each%20with%20a%20bit%20of%20the%20remaining%20olive%20oil,%20season%20with%20salt%20and%20pepper%20and%20serve%20hot.%3C/p%3E%3Cp%3E2.2%3C/p%3E%3Cp%3Ehttp://www.creative-culinary.com/caprese-stuffed-baked-potatoes/%3C/p%3E%3Cp%3EThis%20recipe%20brought%20to%20you%20by%20%C3%82%C2%A9%20%3Cb%3ECreative%20Culinary%3C/b%3E%20%7C%20A%20Food%20and%20Cocktail%20Blog%20%7C%20Website:%20www.creative-culinary.com%3C/p%3E){kind=link}
