- Wash and cut hard-ripe melon into 1-inch slices, crosswise. Remove rind and seed. Cut slices into even pcs. Weigh. Mix melon and sugar.
- Let stand 12 to 18 hrs in refrigerator. Add in lemon juice. Boil till cantaloupe is clear. Pour boiling warm into jars and seal.
