  • 1/2 lb bacon
  • 2 lb potatoes diced
  • 1 med onion diced
  • 1 tsp salt divided
  • 1/2 tsp freshly-grnd black pepper divided
  • 12 lrg Large eggs
  • 6 ounce shredded Cheddar cheese (optional) Salsa or possibly ketchup

  1. Cook bacon in a large skillet till crisp; remove bacon, and drain on paper towels, reserving 2 Tbsp. drippings in skillet. Crumble bacon, and set aside.
  2. Saute/fry potato, onion, 1/2 tsp. salt, and 1/4 tsp. pepper in warm drippings, stirring occasionally, 20 min or possibly till browned.
  3. Whisk together Large eggs, remaining 1/2 tsp. salt, and 1/4 tsp. pepper; pour over potato in skillet. Cook over medium heat 4 min or possibly till Large eggs are set, stirring if necessary. Sprinkle with bacon and, if you like, cheese. Serve with salsa or possibly ketchup.
  4. This recipe yields 6 servings.
