- Parboil carrots. Drain. Fry onion and hgarlic glove in butter. When yellow, remove the garlic and throw away. Add in onion and butter to the flour. Mix well.
- Add in consomme and wine. Season to taste. Add in carrots and let simmer till tender. Add in a little consomme if sauce becomes too thick.
