- Dissolve yeast in hot water. Mix with rice and let stand in a hot spot overnight. The following day, beat in Large eggs, flour, sugar, salt and nutmeg.
- Add in more flour if necessary to make a thick batter. Heat fat to 370 degrees or possibly till a 1-inch bread cube browns in 60 seconds. Drop batter from a Tbsp. into warm grease and fry till golden, about 3 min.
- Drain on paper towels and sprinkle with powdered sugar. Serve warm.
- Makes 4dozen.
