%20were%20scrapped%20when%20the%20rain%20started%20splattering%20across%20the%20car%20windscreen%20after%20picking%20up%20my%20eldest%20niece%20this%20morning,%20and%20she%20decided%20we%20should%20bake%20instead.%20I%20don't%20need%20much%20excuse%20to%20do%20a%20spot%20of%20baking%20and%20after%20a%20quick%20trip%20to%20get%20some%20more%20butter,%20then%20came%20the%20hard%20part%20-%20what%20to%20bake!%3C/p%3E%3Cp%3EAlice%20suggested%20cookies.%20This%20is%20all%20good%20and%20well.%20Except%20for%20some%20reason%20I%20rarely%20make%20cookies,%20I%20am%20much%20more%20a%20cake%20kinda%20girl.%20There%20is%20also%20the%20slightly%20embarrassing%20fact%20I%20have%20not%20baked%20cookies%20in%20a%20long%20time,%20and%20didn't%20really%20fancy%20the%20perfectly%20edible%20ones%20that%20I've%20had%20previous%20success%20with.%20I'm%20not%20sure%20what%20it%20is%20with%20cookies,%20anything%20that%20requires%20resting%20in%20the%20fridge%20for%20x%20amount%20of%20hours%20puts%20me%20off.%20I%20am%20very%20much%20in%20the%20instant%20gratification%20camp%20of%20baking!%20And%20overall%20I%20really%20do%20like%20cake.%3C/p%3E%3Cp%3EWhilst%20I%20am%20slightly%20sad%20to%20report%20that%20my%20cookbooks%20are%20also%20being%20decreased,%20I%20really%20do%20not%20have%20room%20or%20need%20for%20so%20many%20and%20in%20the%20process%20of%20selling%20a%20selection%20of%20them,%20fortunately%20however%20I%20had%20saved%20this%20particular%20'Best%20ever%20Cookies'%20book%20from%20the%20'to-go'%20pile%20and%20managed%20to%20find%20a%20cookie%20recipe%20in%20it%20which%20appealed%20to%20both%20of%20us,%20and%20more%20importantly%20could%20be%20whizzed%20up,%20baked%20and%20consumed%20with%20a%20lovely%20cup%20of%20tea%20in%20rapid%20time!%20It%20also%20helped%20that%20I%20had%20all%20the%20ingredients%20in%20my%20limited%20baking%20supplies%20cupboard%20(read%20that%20as%20shut%20the%20door%20quickly%20and%20hope%20it%20doesn't%20collapse%20on%20itself%20cupboard)%20So%20as%20the%20recipe%20worked,%20I%20guess%20it%20was%20fate%20to%20keep%20the%20book%20and%20will%20have%20to%20find%20room%20for%20it!%3C/p%3E%3Cp%3EOur%20resulting%20cookies%20were%20whilst%20falling%20within%20the%20cookie%20camp,%20also%20reminded%20me%20more%20of%20a%20rock%20cake%20but%20softer%20kinda%20cookie,%20and%20are%20very%20moreish!%20They%20are%20quite%20soft%20but%20not%20so%20soft%20they%20fall%20apart,%20making%20them%20ideal%20for%20dunking!%20The%20texture%20inside%20is%20cakey%20like,%20I%20think%20the%20use%20of%20self-raising%20flour%20does%20give%20them%20quite%20a%20good%20lift%20and%20lightens%20their%20texture%20nicely.%3C/p%3E%3Cp%3EI%20didn't%20have%20the%20full%20amount%20of%20chocolate%20to%20hand,%20so%20made%20do%20with%20a%20100g%20bar%20of%20dark%20swiss%20chocolate%20bashed%20up,%20and%20a%20good%20handful%20of%20descicated%20coconut%20which%20worked%20really%20well%20with%20the%20flavours.%3C/p%3E%3Cp%3EAlso%20I%20am%20still%20getting%20the%20hang%20of%20the%20new%20oven,%20our%20first%20two%20trays%20came%20out%20a%20little%20more%20suntanned%20than%20planned%20so%20I%20reduced%20the%20temperature%20by%2010%20degrees%20and%20shaved%20a%20minute%20off%20the%20cooking%20time,%20which%20worked%20perfectly.%20Your%20oven%20may%20well%20behave%20differently,%20I%20think%20mine%20is%20older%20than%20me...!%3C/p%3E%3Cp%3EMakes%2018-20%3C/p%3E%3Cp%3EOven%20180-190%20-%20see%20above!%3C/p%3E%3Cp%3ECream%20together%20the%20butter%20and%20sugar%20until%20light%20and%20fluffy.%20Add%20the%20egg%20and%20vanilla,%20beat%20well,%20sift%20in%20the%20flour%20(I%20actually%20have%20no%20sieve%20at%20the%20moment%20but%20fortunately%20didn't%20affect%20the%20recipe!)%20and%20fold%20in%20using%20a%20metal%20spoon,%20along%20with%20the%20oats%20and%20chocolate%20until%20mixed.%3C/p%3E%3Cp%3EPlace%20dessert%20spoon%20sized%20blobs%20on%20lined%20baking%20trays,%20leaving%20a%20gap%20as%20they%20will%20spread%20out.%20Bake%20for%2014%20minutes%20or%20until%20golden%20brown%20and%20your%20kitchen%20smells%20delicious.%20Cool%20for%20a%20couple%20of%20minutes%20then%20transfer%20to%20a%20wire%20rack%20and%20resist%20the%20urge%20until%20cooled%20sufficiently%20enough%20not%20to%20burn%20yourself.%3C/p%3E){kind=link}
