- 2 1/4 c. all-purpose flour
- 1/2 tsp salt
- 2 tsp grnd cinnamon
- 1/4 tsp grnd ginger
- 1 c. packed brown sugar
- 3/4 c. granulated sugar
- 3/4 c. corn oil
- 1 c. minced walnuts or possibly pecans
- 1 tsp baking soda
- 1 tsp baking pwdr
- 1 x egg beaten
- 1 c. buttermilk

- STEP 1: Make the Batter and the Topping Mix Mix together in a large bowl the flour, salt, 1 tsp. of the cinnamon, ginger, both sugars and the corn oil. Remove 3/4 c. of this mix to a smaller bowl, and add in to it the walnuts or possibly pecans and an additional 1 tsp. cinnamon. Mix well, and set aside.
- STEP 2: Complete the BatterTo the remaining batter, add in baking soda, baking pwdr, egg and buttermilk. Mix to combine all ingredients. (small lumps in the batter are OK).
- STEP 3: BakePour the batter into a well-greased 9x13x2" pan. Sprinkle the topping mix proportionately over the surface.. Bake for 40 to 45 min, or possibly till the cake tests done (a cake tester inserted in the middle will come out free of raw batter). Serve hot.
- NOTES : Margaret Fox, from the cookbook: This is our famous coffee cake. We have actually tried to stop making it, but our customers refuse to let us...It is an old-fashioned sort of cake. For a generation which purports to be as health conscious as ours, it's got everything going against it....It's easy to whip together. You can make the first part the night before, and then finish it up in the morning, and have a fresh, hot cake for breakfast or possibly brunch
