I've got a few tasty waffle recipes posted on my blog (like my Gingerbread Pumpkin Waffles). This waffle recipe is no exception.
Now that Craig and I are empty nesters, I'm looking for ways to convert recipe portions by at least half. Sure, leftover waffles can be frozen and reheated. I'd much prefer to have a simple recipe, that I can make in a matter of minutes-- and one that makes just enough waffles for the two of us. This recipe delivered exactly that.

.%20%20This%20waffle%20recipe%20is%20no%20exception.%3C/p%3E%3Cp%3ENow%20that%20Craig%20and%20I%20are%20empty%20nesters,%20I'm%20looking%20for%20ways%20to%20convert%20recipe%20portions%20by%20at%20least%20half.%20%20Sure,%20leftover%20waffles%20can%20be%20frozen%20and%20reheated.%20%20I'd%20much%20prefer%20to%20have%20a%20simple%20recipe,%20that%20I%20can%20make%20in%20a%20matter%20of%20minutes--%20and%20one%20that%20makes%20just%20enough%20waffles%20for%20the%20two%20of%20us.%20%20This%20recipe%20delivered%20exactly%20that.%3C/p%3E%3Cp%3EAmerica's%20Test%20Kitchen%20remains%20one%20of%20my%20most%20trustworthy%20recipe%20sources.%20%20I%20recently%20bought%20The%20Complete%20Cooking%20for%20Two%20Cookbook,%20and%20I'm%20slowly%20making%20my%20way%20through%20many%20of%20the%20recipes%20I've%20bookmarked.%3C/p%3E%3Cp%3EThere%20are%20two%20ingredients%20that%20you%20might%20not%20have%20in%20your%20pantry,%20that%20you%20will%20need%20for%20this%20recipe.%20One%20of%20them%20is%20buttermilk%20powder.%20It's%20quite%20easy%20to%20find--%20usually%20in%20the%20baking%20section%20of%20your%20grocery%20store.%20I%20also%20%20see%20that%20Bob's%20Red%20Mill%20makes%20one,%20too.%20%20%20I%20store%20the%20%20powder%20in%20my%20refrigerator%20(once%20it's%20opened)%20and%20it's%20come%20in%20handy%20for%20the%20times%20when%20I%20don't%20have%20buttermilk%20in%20my%20fridge.%20It's%20perfect%20for%20making%20bread%20and%20all%20kinds%20of%20baking.%20The%20other%20ingredient%20is%20seltzer%20water.%20Yep,%20I%20always%20have%20a%20few%20can%20of%20that,%20as%20well.%20It's%20great%20for%20making%20these%20Swedish%20pancakes.%20%20Not%20only%20that,%20but%20I%20find%20seltzer%20water,%20mixed%20with%20fresh%20fruit%20juice%20is%20quite%20refreshing.%3C/p%3E%3Cp%3ESo,%20why%20seltzer%20water,%20you%20ask?%20%20%20ATK%20wanted%20a%20waffle%20that%20would%20have%20a%20crisp,%20golden-brown%20crust%20with%20a%20moist,%20fluffy%20interior.%20%20The%20seltzer%20water%20%20gives%20more%20%22oompf%22%20in%20leavening%20along%20with%20some%20baking%20soda.%20.%20(The%20tiny%20bubbles%20inflate%20the%20batter%20the%20same%20was%20as%20a%20chemical%20leavener.)%20%20Why%20not%20use%20regular%20buttermilk?%20Well,%20the%20powder%20produced%20a%20lighter%20waffle%20without%20a%20gummy%20interior.%20That%20works%20for%20me!%3C/p%3E%3Cp%3EFor%20the%20wet%20ingredients,%20I%20used%20sour%20cream,%20egg,%20vegetable%20oil,%20a%20little%20vanilla%20and%20the%20seltzer%20water.%20Whisk%20together.%3C/p%3E%3Cp%3EFor%20the%20dry%20ingredients,%20I%20whisked%20together%20flour%20%20and%20buttermilk%20powder%20There's%20a%20little%20sugar,%20pinch%20of%20salt%20and%20some%20baking%20soda.%20%20Add%20the%20wet%20to%20the%20dry...%3C/p%3E%3Cp%3EMix%20until%20just%20combined.%20Some%20lumps%20are%20absolutely%20fine.%3C/p%3E%3Cp%3ECook,%20according%20to%20your%20waffle%20iron%20instructions.%3C/p%3E%3Cp%3EThese%20waffles%20aren't%20really%20dark%20(because%20my%20waffle%20iron%20doesn't%20have%20a%20settle%20adjustment),%20but%20I'm%20actually%20okay%20with%20that.%20%20I%20served%20these%20right%20away.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20Quite%20simply,%20these%20were%20delicious.%20They%20were%20fluffy%20and%20tender%20on%20the%20inside%20and%20on%20the%20outside.%20You%20see,%20the%20first%20time%20I%20made%20these,%20I%20skipped%20the%20step%20of%20placing%20each%20waffle%20into%20a%20200F%20preheated%20oven,%20on%20a%20wire%20rack.%20%20So,%20they%20didn't%20have%20that%20crunchy%20exterior%20that%20this%20recipe%20was%20developed%20to%20do.%20Not%20a%20big%20deal.%20We%20still%20enjoyed%20them.%3C/p%3E%3Cp%3EUntil,%20I%20made%20these%20again.%20This%20time,%20I%20did%20place%20them%20into%20the%20oven%20for%20about%205%20minutes,%20because...%3C/p%3E%3Cp%3EI%20made%20Chicken%20and%20Waffles%20for%20dinner!%20%20The%20waffles%20had%20a%20crispy%20exterior,%20to%20hold%20up%20the%20weight%20of%20placing%20a%20crispy%20fried%20and%20baked%20piece%20of%20chicken,%20and%20then%20smothering%20it%20with%20pure%20maple%20syrup.%3C/p%3E%3Cp%3EIf%20you're%20thinking%20what%20I%20used%20to%20think...%20along%20the%20lines%20of%20%22Ew,%20chicken%20and%20waffles%22.%20That%20is%20weird!%22%20%20I%20can%20assure%20you%20that%20it's%20not.%20I'm%20now%20a%20convert.%3C/p%3E){kind=link}
