- Peel and finely slice the onions. Heat the oil in a heavy based pan and cook the onions over a low heat for 10 min till soft.
- Add in the sugar and cook till golden in colour, about 20 min. Add in the sherry and vinegar and continue to cook till mix is transparent.
- Ladle into sterilised jars and seal.
- Delicious with warm and cool meats.
- Keeps for 3-4 months.
- Ensure storage jars are well sterilised.
