Brazil Nut Fruit Cake

Ингредиенты

  • 3/4 c. flour
  • 3/4 c. sugar
  • 1/2 teaspoon baking pwdr
  • 1/2 teaspoon salt
  • 3 c. whole Brazil nuts
  • 2 Packages whole pitted dates
  • 1 c. maraschino cherries, liquid removed and minced
  • 3 Large eggs
  • 1 teaspoon vanilla
  • Vegetable shortening or possibly butter for loaf pan

Инструкции

  1. Sift together flour, sugar, baking pwdr and salt into a large bowl. Add in the nuts, dates and cherries. Mix well. Beat the Large eggs with the vanilla and blend into the flour mix.
  2. Pour into a 3x7 pan lined with greased parchment paper (wax paper can be substituted for the parchment paper). Bake in a preheated 350 degree oven for 45-60 min. Let cold briefly in pan, then turn out of pan and finish cooling on a rack.
