- TURN THE OVEN ON TO 200ËC/180ËC FAN/GAS 6
- BOIL - Boil a kettle and make up the stock according to the packet instructions.
- BUTTER - Butter an ovenproof dish. Wash the thyme.
- BRAISE - Halve the 4 chicory heads lengthways. Rinse under the tap. Put them in the dish. Add the stock, the thyme, a pinch of salt and a good grind of black pepper. Cover tightly with foil and put in the oven for 20 minutes.
- UNCOVER - Remove the foil and continue to cook for a further 15 minutes.
