%20vegetables%20with%20curry%20tofu.%20The%20tofu%20was%20delicious.%20The%20veg?%20Eh...%20Oh,%20and%20there%20wasn't%20any%20rice.%20I%20burned%20it.%20I.%20Burned.%20The.%20Rice.%20What%20is%20wrong%20with%20me??%3C/p%3E%3Cp%3EI%20have%20been%20finding%20inspiration%20from%20other%20sources%20though.%20I'm%20hoping%20that%20plus%20the%20good-ish%20weather%20will%20give%20me%20a%20kick%20start.%3C/p%3E%3Cp%3ESo%20a%20few%20weeks%20back%20I%20went%20to%20VegFest.%20While%20I%20was%20there%20I%20looked%20at%20the%20flag.%20And%20then%20the%20Vegetarians%20of%20Washington%20gave%20me%20a%20bag%20full%20(if%20not%20overflowing)%20of%20free%20stuff%20including%20a%20free%20Vegetarian%20Times%20magazine.%3C/p%3E%3Cp%3EAs%20I%20perused%20my%20free%20copy%20of%20Vegetarian%20Times,%20I%20was%20pleasantly%20surprised%20at%20some%20of%20the%20simple,%20yet%20fantastic%20meals.%20This%20was%20one%20of%20them.%20I,%20of%20course%20made%20some%20changes;%20regardless,%20I%20was%20happy%20for%20the%20inspiration.%3C/p%3E%3Cp%3EAnd%20wait%20until%20you%20see%20what%20I%20did%20with%20the%20left%20overs...%20ok,%20so%20maybe%20my%20creative%20juices%20are%20flowing%20just%20a%20little%20bit.%20I'll%20take%20it!%3C/p%3E%3Cp%3ENeed:%3C/p%3E%3Cp%3E1%20package%20Gardein%20beefless%20tips%20side%20note:%20I%20LOVE%20these!!!%20LOVE!%3C/p%3E%3Cp%3E2-3%20green%20onions,%20chopped%3C/p%3E%3Cp%3EDo:%3C/p%3E%3Cp%3EIn%20a%20large%20skillet,%20heat%20some%20truffle%20oil%20on%20med/high.%20Add%20garlic,%20button%20mushrooms%20and%20shitake%20mushrooms%20and%20cook%20for%20about%208-10%20minutes,%20until%20browned.%20Once%20done,%20tranfer%20to%20a%20bowl.%3C/p%3E%3Cp%3EIn%20the%20skillet,%20add%20the%20tomatoes,%20sliced%20side%20down%20and%20cook%20for%20about%203-5%20minutes,%20until%20slightly%20softened%20and%20browned.%3C/p%3E%3Cp%3EAdd%20a%20little%20more%20truffle%20oil%20to%20the%20pan,%20then%20add%20shallots.%20Cook%20shallots%20for%202-3%20minutes%20then%20add%20bulghur.%20Stir%20until%20everything%20is%20evenly%20covered%20with%20oil.%3C/p%3E%3Cp%3EAdd%20mushroom%20broth,%20thyme%20and%20a%20little%20salt%20and%20pepper.%20Cover%20and%20reduce%20heat%20to%20low/med.%20Let%20simmer%20for%20about%205%20minutes.%3C/p%3E%3Cp%3EAfter%20about%205%20minutes,%20evenly%20distribute%20the%20mushrooms%20and%20tomatoes%20on%20top%20of%20the%20bulghur.%20Top%20that%20with%20the%20bok%20choy,%20cover%20and%20let%20cook%20another%208-10%20minutes.%3C/p%3E%3Cp%3EWhile%20that%20cooks,%20heat%20your%20Gardein%20beefless%20tips%20in%20a%20separate%20small%20saute%20pan.%3C/p%3E%3Cp%3ECheck%20to%20ensure%20that%20the%20bok%20choy%20is%20appropriately%20al%20dente.%20When%20it%20is,%20you%20are%20ready%20to%20serve.%3C/p%3E%3Cp%3EServe:%3C/p%3E%3Cp%3EArrange%20bok%20choy%20to%20one%20side%20of%20the%20pan%20so%20you%20can%20get%20to%20the%20bulghur.%3C/p%3E%3Cp%3EOn%20a%20plate,%20start%20by%20portioning%20out%20a%20little%20bulghur.%20From%20there,%20add%20mushrooms%20and%20tomatoes%20in%20an%20even%20amount.%20Top%20with%20some%20Gardein%20beefless%20tips.%3C/p%3E%3Cp%3EAdd%20a%20bok%20choy%20to%20the%20side.%20Drizzle%20everything%20with%20a%20little%20extra%20truffle%20oil,%20for%20added%20flavor.%3C/p%3E%3Cp%3ESprinkle%20green%20onions%20on%20top%20to%20finish.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E%3Cp%3EBulghur%20Wheat%3C/p%3E){kind=link}
