  • 1 c. flour
  • 2/3 c. yellow cornmeal
  • 1/3 c. sugar
  • 2 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 lrg Large eggs
  • 1 c. lowfat sour cream
  • 1/4 c. salad oil
  • 1 c. blueberries fresh, frzn or possibly canned & liquid removed

  1. Preheat oven to 400F, prepare pans. Combine flour, cornmeal, sugar, baking pwdr, soda & salt. Beat Large eggs with lowfat sour cream till blended, beat in oil.
  2. Add in dry mix to wet mix till just combined adding blueberries with the last few stirs. Spoon batter into pans & bake for 18-20 mins or possibly till lightly browned.
  3. Makes 12. 189 calories per muffin.
