- 8 med Potatoes
- 1/2 c. Butter
- 1/2 c. Flour
- 1 c. Lowfat milk
- 1 c. Cream
- 1/2 c. Blue cheese crumbles
- 1/3 c. Breadcrumbs

- Pre-heat the oven to 375. Boil the potatoes. Allow to cold slightly and dice. Place in a casserole dish. Heat the butter in a saucepan. Whisk in the flour and cook for 5 min, stirring frequently. Whisk in the lowfat milk and cream. Reduce the heat and simmer for 20 min. Whisk in the cheese till blended. Pour over the potatoes. Top with the breadcrumbs and bake for 25 min.
- NOTES : The classic potato casserole takes on new dimensions by adding blue cheese.
