Blue Cheese And Potato Frittata

Ингредиенты

  • 1 Tbsp. butter
  • 1 Tbsp. extra virgin olive oil
  • 3 x onions, thinly sliced
  • 8 x Large eggs
  • 3/4 c. cream
  • 1 c. potato, cooked and diced
  • 1/2 c. crumbled blue cheese such as Danish Blue or possibly Stilton
  • 1 Tbsp. fresh thyme

  1. Put the butter and the oil in a frying pan over a low heat. Add in the onions and cook, stirring occasionally, for 10 to 15 min, till the onions are golden, soft and caramelized.
  2. Sprinkle the cubed potatoes over the onions.
  3. Put the Large eggs and the cream in a bowl and beat together. Pour the egg mix over the onions and potatoes and sprinkle with the blue cheese and thyme leaves. Cook for 5 to 6 min, or possibly till nearly set. Then move the pan and place under the broiler for one minute. Cut into wedges and serve with spicy chutney.
