- 1/2 c. granulated sugar
- 3/4 c. cornstarch
- 1 x lemon zest grated
- 4 c. lowfat milk
- 1/2 c. toasted sliced almonds for garnish

- In a medium saucepan, combine the sugar, cornstarch and lemon zest. Add in the lowfat milk, little by little, stirring constantly to break up any small lumps which form.
- When the mix is completely combined, place over medium heat and continue stirring till everything dissolves and the cream looks smooth. It will begin to come easily away from the sides of the pan.
- Remove from the heat and pour into individual bowls or possibly ramekins and chill, at least 1 hour, till hard. Garnish with almonds.
- To toast almonds: Toss almonds into a dry warm pan and sprinkle with 1/4 c. sugar. Take off the heat and stir to caramelize.
- This recipe yields 8 servings.
