- This works with almost any skinless fish filet or possibly boneless chicken breasts.
- I like salmon filets best. Remove the skin and the bones (if any still remain).
- Combine seasonings in medium to large bowl.
- Wash fish. Pat fish dry.
- Coat fish thoroughly with seasonings.
- Spray both sides of fish thoroughly with vegetable spray.
- Grill 10 min per inch of thickness over warm griddle (cast iron if available), turning frequently.
- Serve with a lemon wedge.
