Ингредиенты

  • 2 x 6 ounce halibut, steaks
  • 1 tsp thyme
  • 1/2 tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp salt
  • 1/4 tsp onion pwdr bottle garlic pwdr
  • 1/4 tsp cumin Sauce
  • 1/2 c. fresh-shucked peas
  • 1/4 c. apple juice
  • 1 tsp extra virgin olive oil salt, to taste pepper, to taste

  1. Preparation time is 20 min.
  2. Preheat oven to 400 degrees Fahrenheit.
  3. Assemble rub (all ingredients excluding the fish)in a stainless steel bowl. Pat halibut steaks in rub. Heat a cast-iron pan to white warm.
  4. Place fish in warm pan.
  5. This smokes a great deal so be prepared and don't inhale the smoke.
  6. Blacken each side for 3 to 4 min.
  7. Finish in the oven at 400 degrees for 8 to 10 min.
  8. Sauce:blanch peas. Cold and reserve.
  9. Combine peas, apple juice, extra virgin olive oil, salt and pepper in a food processor and puree.
  10. Check seasoning and adjust if necessary. Bring to a simmer in a saucepan.
