  • 10 c. fresh blackberries see * Note
  • 2 1/4 c. sugar
  • 1 tsp grated lemon rind
  • 1/4 c. fresh lemon juice
  • 4 c. fat-free buttermilk

  1. Note: Five (14-oz) pkgs. frzn blackberries, thawed, may be substituted.
  2. Bring first 4 ingredients to a boil in a saucepan, stirring constantly; reduce heat, and simmer 15 min. Cold.
  3. Process blackberry mix, in batches, in a blender or possibly food processor till smooth, stopping to scrape down sides.
  4. Pour blackberry puree through a fine wire-mesh strainer into a bowl, pressing pulp with back of a wooden spoon. Throw away pulp, and stir in buttermilk. Freeze 8 hrs.
  5. Process frzn blackberry mix, in batches, till smooth. Freeze 5 hrs.
  6. This recipe yields 14 c..
  7. Comments: This tart, refreshing dessert is a terrific source of calcium. Recipe may be halved.
