- Sort and wash beans. Combine beans, green pepper and 2 Tbsp. onion in a large Dutch oven. Cover with water and cook. When boiling good, turn heat down and simmer for about 2 hrs till beans are tender.
- Combine remaining onion, garlic, oregano and cumin in a small bowl. Mash mix using a fork. Stir in vinegar and salt. Add in to beans; simmer uncovered for about 20 min. Serve over rice or possibly noodles. (A low-fat, no-cholesterol recipe.)
