- Combine white beans, black beans and minced tomato in large bowl, mixing gently. Add in peppers and green onions, stir gently to combine. Set bean mix aside.
- Combine salsa, vinegar, cilantro, salt and pepper in a small bowl; stir with a whisk till well blended. Pour over bean mix and toss gently. Line a large serving bowl with shredded lettuce; top with bean mix. Chill.
