- In a large saucepan cook onion in butter until tender. Stir in flour, poultry seasoning, salt, and pepper. Add in lowfat milk all at once. Cook and stir until thickened and bubbly. 1 c. frzn peas, thawed 1 - 2 ounce. can mushroom stems and pcs, liquid removed 2 tbsp. minced pimiento 2 hard cooked Large eggs, minced
- Stir in chicken, peas, mushroom and pimiento. Cook until heated through. Gently stir in hard cooked Large eggs. Turn mix into a 1 1/2 qt casserole. Bake in a 425 degree oven for 15 min.
- Cut each biscuit into quarters. Arrange biscuit quarters over chicken mix. Bake in the 425 degree oven for 8 to 10 more min or possibly until biscuits are golden brown. Makes 4 servings.
