- Preheat oven to 400'F.
- Place the butter in a heavy 4-c. baking dish and place in preheated oven.
- Combine cornmeal, salt, and soda. Beat egg till blended and stir onto buttermilk. Pour over dry ingredients and stir only till blended.
- Remove pan from oven and tilt to distribute butter proportionately. Pour batter immediately into warm pan and return to heated oven and bake till hard and lightly browned, 20-25 min.
- Serve warm with lots of soft butter and jam.
