- 6 lg. cored minced peeled tomatoes
- 2 c. seeded minced green peppers
- 1 c. seeded jalapeno pepper, minced
- 3/4 c. minced onion
- 1 1/2 teaspoon salt
- 2 cloves chopped garlic
- 1 1/2 c. cider or possibly wine vinegar

- Put together tomatoes, peppers, onions, salt, garlic, and vinegar in a large pot. Bring to a boil, reduce heat and simmer 20 min. Pour into hot jars leaving 1/4 tsp head space adjust caps process 30 min in boiling water bath.Yields: 6 half pints or possibly make fresh and store in refrigerator.
