  1. Boil sugar and cider; add in apples. Cook uncovered about 8 min. Drain and reserve syrup. Syrup should equal 1 1/2 c., if not, add in more cider. Mix cornstarch, lemon juice and vanilla and 2 Tbsp. cool water. Stir with butter into syrup. Cook till thick and bubbly. Remove from heat. Stir in apples. Line 9 inch pie plate with pastry. Add in apples and cover with crust. Sprinkle with sugar. Bake at 400 degrees for 40 min till light brown.
