- Bengal Chicken - Adapted From *Joy Ball, Recipes From Home, Redmond 2nd Ward
- 1/2 cup butter
- 1/2 cup honey
- 1/4 cup prepared mustard
- 1 dozen drumsticks or thighs (I doubled the recipe as I was making dinner for a friend, I used 5 legs with thigh attached and 6 chicken breasts)
- 1/4 teaspoon salt
- 1 teaspoon curry powder (or more if you like)

.%20%20It%20was%20submitted%20by%20my%20friend%20Joy%20Ball,%20and%20she%20calls%20this%20recipe%20Chicken%20Diable%20but%20every%20time%20I%20made%20this%20dish%20for%20the%20fam%20I%20would%20tell%20the%20girl%20and%20boy%20about%20how%20Joy%20was%20raised%20in%20India,%20and%20how%20she%20said%20she%20could%20hear%20the%20tigers%20growling%20at%20night...Bengal%20tigers...therefore,%20this%20dish%20became%20Bengal%20Chicken.%3C/p%3E%3Cp%3EJoy's%20parents%20were%20missionaries%20and%20I%20think%20they%20ran%20an%20orphanage%20in%20India...they%20were%20originally%20from%20England.%20%20Joy%20told%20us%20about%20her%20childhood%20at%20a%20church%20function%20and%20I%20remember%20her%20saying%20there%20were%20open%20windows%20in%20the%20place%20where%20she%20slept%20-%20no%20glass,%20no%20door%20-%20and%20tigers%20could%20just%20walk%20in%20and%20grab%20children,%20eat%20them%20and%20then%20slink%20back%20into%20the%20night...it's%20possible%20she%20didn't%20say%20that%20last%20bit%20about%20the%20tigers,%20but%20that's%20now%20how%20the%20story%20goes...my%20kids%20believed%20me,%20their%20eyes%20bugged%20out%20in%20horror%20as%20they%20ate%20every%20piece%20of%20Bengal%20chicken...they%20might%20have%20been%20told%20that%20eating%20Bengal%20chicken%20would%20protect%20them%20from%20tigers...%20naturally%20they%20ate%20every%20drop.%20%20Before%20you%20go%20calling%20me%20Mommy%20Dearest,%20let%20me%20say%20that%20my%20kids%20were/are%20the%20pickiest%20eaters%20on%20the%20planet...if%20it%20weren't%20for%20chicken%20nuggets%20and%20Kraft%20Macaroni%20and%20Cheese,%20they%20would%20have%20died%20from%20starvation...so%20I%20had%20to%20do%20whatever%20I%20could%20to%20get%20them%20to%20eat...plus%20they%20now%20have%20a%20healthy%20fear%20of%20Bengal%20Tigers!%3C/p%3E%3Cp%3EChicken%20cooked%20in%20a%20sauce%20that%20is%20slightly%20sweet,%20exotic%20and%20down-right%20delish...butter,%20honey%20and%20curry...a%20perfect%20trifecta%20that%20is%20sure%20to%20please,%20and%20it's%20an%20excellent%20tiger%20deterrent!%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20%20In%20medium-size%20sauce%20pan%20over%20medium-high%20heat,%20melt%20butter;%20add%20honey,%20mustard,%20salt%20and%20curry%20powder.%20%20Mix%20together%20until%20combined,%20smooth%20and%20heated%20through.%20%20Remove%20from%20heat%20and%20dip%20each%20piece%20of%20chicken%20into%20mixture,%20then%20place%20in%20a%209x13-inch%20baking%20dish%20or%20a%20rimmed%20baking%20sheet.%20%20Pour%20remaining%20mixture%20over%20the%20top.%20%20Bake%20at%20350%20degrees%20for%20about%2045%20minutes,%20or%20until%20chicken%20is%20done.%20%20(Joy%20recommends%20serving%20over%20rice,%20with%20sauce%20from%20the%20baking%20dish,%20which%20is%20how%20we%20normally%20eat%20this%20-%20it's%20dang%20good!)%3C/p%3E%3Cp%3E*Joy%20-%20I'm%20so%20glad%20you%20weren't%20eaten%20by%20tigers!%20%20Thanks%20for%20this%20recipe,%20we%20LOVE%20it!%3C/p%3E){kind=link}
